The dinner bell however, promised less than a great feast. Meals consisted of tough or stringy meats such as brisket, pork butt, pork ribs or vennison, cuts that ideally required five to seven hours cooking time through common methods. Quickly cooked, these meats where hardly the kind a rustler could sink his teeth into. Thus, slow roasting over and open fire came to be the standard way for cowboys to tenderize sub-standard meats.This idea caught on across the country as barbeque moved its way from the deserts and plains to mainstream society. Deep in the south barbeques were arranged for civil war political rallies, church picnics and even private parties. The trend grew as people came to favor slow roasted meats along with the sense of community a festive barbeque could offer.

The rotisserie uses spits which skewer meat and poultry and rotate them over a heat source. This slow, rotational method allows the heat to pass over every portion of the food while letting it continually baste itself in its own juices.
